Easy Vegetarian Lasagne

Ingredients

3 C of chopped veggies of your choice (eg. capsicum, broccoli, carrots)

1 small onion, diced

2 cloves garlic, finely chopped

1 T olive oil

1 C low fat ricotta cheese or plain cottage cheese

1 egg

2 C spinach, chopped (choose frozen if easier, and if so squeeze water out)

1/2 C tomato sauce

3/4 C tomato paste

1 can chopped tomatoes

12 gluten free lasagne sheets

1 C mozzarella cheese, grated

Directions

1. Cook the onion and garlic in oil over a medium high heat. Add vegetables and cook until tender. Set aside.

2. Whisk egg with ricotta cheese and stir in fresh spinach.

3. Alternate sauce, then egg mixture then 4 lasagne sheets noodles, topping with pasta sheets, a little sauce and mozzarella cheese.

4. Cover with foil and bake for 40 minutes at 180°C. Remove foil and bake for 10 minutes more or until cheese is bubbly.
